It’s been more than a week since my last post and when I sat down to write yesterday it was almost like I forgot how to blog. So, today I thought I’d do something relatively easy and link up with Jenn and friends for What I at Wednesday.
In my last WIAW post I talked about my foray into meatless eating. Like I mentioned in that post, I never intended to cut meat out for good. In fact, I didn’t expect my plant based diet to last for as long as it did, 10 days. I don’t remember exactly what my first meal containing meat was, but I’m pretty sure it was a salad with either canned tuna or canned salmon. Since then, I’ve eaten meat almost everyday, but I still try my best to have at least one meatless meal a day.
I’ve found that I’m more creative in the kitchen if I’m not relying on meat as my source of protein. And, since eating plant based for those 10 days, I’ve been eating a lot more fruits and veggies than I used to before, which is always a good thing. Anyway, here’s a look at what a typical day of eats looks like for me these since reintroducing meat into my diet.
Breakfast
My breakfast hasn’t changed that much. Yesterday, I’d originally planned to make granola, but I was ravenous when I woke up and all I could think about was eating ASAP. So, I ended up having a green smoothie topped with hemp seeds and cereal. This smoothie was actually a variation of the pineapple quinoa green smoothie I shared a few weeks ago, except I swapped out the quinoa for about 2 tablespoons of chia seeds. Still just as good.
Snack #1
I wasn’t extremely hungry at noon so I decided to have a couple open faced sandwiches. Usually I would have peanut butter and bananas or avocado toast, but I was feeling a little adventurous, so I tried something new. I spread some Gaylea’s Lactose Free Nordica Cottage Cheese on a couple pieces of toast and topped them with strawberries and blueberries and a drizzle of maple syrup. It’s been forever since I had any kind of real cheese so, even though cottage cheese used to be my least favourite, these sandwiches were the highlights of my day.
Lunch
I ended up having lunch around 2pm and it was surprisingly another meatless meal. On Sunday I had made this Fettuccine with Creamy Mushroom Ragu in honour of Father’s Day and lunch yesterday ended up being some of the leftovers. I didn’t actually take a pic since my phone was MIA at the time, but trust me, it looked and tasted just as good yesterday as it did on Sunday.
Snack #2
In the afternoon, I worked on a new dairy free ice cream recipe that I should be sharing with you soon. It wasn’t quite ready yet, but I still had a lot of fun recipe testing (read: eating all the ‘failures’). Again, I didn’t manage to snap a pic, but you’ll be seeing it on the blog soon, so don’t worry.
Dinner
Ground beef was on sale when I went to the grocery on Monday so I picked up some of that instead of the ground turkey that was actually on my list. It’s been eons since I bought ground beef but I had no problems cooking it up for dinner that night with some shallots, garlic, yellow bell pepper and tomatoes. On Monday, I paired it with roasted shallots, brussels sprouts and radishes. But, last night I had leftover beef with the last of the pasta. Simple, but oh so good.

The first dairy free ice cream I had was just Vanilla Rice Dream! It was great, but I don’t eat any sweets like that anymore, haha!

Even though meatless/vegetarian isn’t for you it’s great you tried and noticed some benefits.
I’ve eaten quite a lot of dairy-free ice cream throughout the last years and there were some pretty awesome creations among those. One of the flavours I’ll never forget was vegan carrot cake.

Hi Giselle! Oh your food photos are just the best. I actually eat a lot of meatless meals unintentionally as well. Sometimes I only have meat at dinner and that is it. Lately, I’ve been having a lot of almonds and Greek yogurt. And sweet potatoes of course. Happy WIAW to you! π

I was vegetarian for 10 years, and while going back to chicken and especially bacon, didn’t pose any problems for me, getting my body used to beef took years! I can still only eat red meat once a week at the most. Dairy does bother my stomach occasionally, but I can’t go a day without cheese, and I’ll have almond milk on my cereal, but it’s just not the same as proper milk π If I’m going to have ice cream, I’ll risk the upset stomach for the real thing, lol!
