21 Quick and Healthy Snacks for Easy Meal Prep

Earlier this week I read this post on food prepping by Amy of The Little Honey Bee and it got me thinking about that one month way back in 2014 when I tried it myself. Clearly, that phase of my life didn’t last very long. My attempts at food prepping took forever and I always ended up exhausted. And 9 times out of 10, I didn’t even make it to the snack prepping portion of the evening.

But, reading Amy’s post inspired me to give it a go again. Even though I’m home all the time these days, there are so many other things I should be doing with my time than cooking a meal from scratch three times a day. And since my insatiable snack monster means I’m usually more worried about snacks than anything else, I decided to start  there. Surprisingly, for once, they’re not all sweet.

      haha good for you! I’m usually the same. But recently I’ve been thinking it would be great to have at least some prepped grains and meats on hand to throw together a meal, especially when I start working.

    No ma’am — no food prepping here. I’ll make bigger batches of stuff like grains and what not to have on hand to throw together a quick meal, but you’ll never catch me spending 4 hours on the weekend portioning it all out into Tupperware containers for the week. Mad props to anyone who can do that because I’m sure it saves time in the long run, but I prefer to just go with the flow.

      That four hour prep time was seriously my issue. But, the point of Amy’s post was that you should focus on prepping ingredients (grains, neats, chopped veggies etc) instead of actual full meals. So, by her definition, you’re actually a food prepper ๐Ÿ˜‰
