Hey Friends! How’s it goin?

Remember a couple weeks ago when I felt like a rebel cuz I was making ice cream sandwiches in single digit weather? Well now that it’s fall and I’m finally ready to do all the fall things, the sun was out in full force this weekend. Seriously, it was hotter than most of the days in summer.

Am I complaining? No. Because it means I had this for breakfast all weekend: Pumpkin Pie Green Smoothie

After I opened my first can of pumpkin to bake these apple surprise pumpkin spice muffins, I wasn’t in the mood for anymore baking. My kitchen was already hot due to the weather change, and I didn’t want to turn on the oven and add even more heat into the mix, especially since I like to leave the A/C off as much as possible (read: keep the hydro bill down).

I had my usual smoothie fixings in the fridge untouched for more than a week, cuz I hadn’t really been feeling smoothies. So, I set out to create the most veggie-filled smoothie there ever was, that still tasted amazing. I threw my spinach, avocados, pumpkin and other smoothie stuff into the blender and was feeling pretty good about how many vegetables I as about to consume.

But then I started thinking. Is pumpkin a vegetable? Are AVOCADOS even vegetables?!

So, while I was slurping down on my (maybe) vegetable filled smoothie I did some googling. Turns out avocados and pumpkins are actually fruits. In fact, there are a lot of fruits that are commonly mistaken as vegetables: eggplant, peppers, cucumbers, tomatoes, squash olives and okra.

Then I started to wonder if I eat ANY vegetables at all…

But you know what? My smoothie was yummy, the weather was nice, I was eating drinking pumpkin and had a post gym high. I couldn’t even muster up some pretend concern. My veggie consumption – or lack thereof – would have to be an issue for another day.

Pumpkin Pie Green Smoothie

This pumpkin pie green smoothie combines a fall favourite with green superfoods, for a tasty, veggie packed treat, perfect for breakfast or dessert

Ingredients
  • 1 ripe banana*
  • ¼ ripe avocado
  • 1 cup loosely packed spinach
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ¼ cup rolled oats
  • ¼ - ½ cup unsweetened almond milk
  • 2 tsp pumpkin spice
  • ice
Instructions
  1. Add all ingredients into a blender and blend until smooth
  2. Devour immediately
Notes
* For a creamier smoothie, use 3-4 frozen banana chunks instead

    It blew my mind when I found out that pumpkin was actually a fruit… it’s like I had been living a lie lol: I just tend to go by the rule that if it comes with seeds, it’s a fruit. But fruit or veggie, this smoothie looks delicious. And I’m one of those people who drinks smoothies year round because my body doesn’t care for seasonal eating… even if it means slurping them in front of a fireplace 🙂

    I gotta say that chocolate peanut butter banana is one of my fave smoothie flavours, as well as mango vanilla. I have yet to try/make a healthy pumpkin pie tasting smoothie that aaacctualllly tastes like pumpkin pie, so maybe this one will work!

      I know exactly what you mean- The first 10 times I made this I found it wasn’t pumpkin pie-y enough and eventually I reduced the amount of avocado and upped the pumpkin & spice.
