Hey Friends! How’s it goin?

Everybody excited about getting back to the real world today? I’m still at home in Trinidad and will be until Friday, so I’m missing my first week of school. But, I’m already thinking of all the things I’ll have to do to prep for my first official day of school next Monday.

Apart from buying school books and finding out where my classes are, prepping food for the school week has become a big part of my weekend-before-school routine. It’s also something that I kept doing during the semesters that I worked and wasn’t in school.

Prepping lunch and snacks to carry to school/work takes away a lot of the pressures of trying to stay healthy while busy. When I already have my meals packed for the day, I don’t  have to worry about trying (and failing) to find something healthy to eat on campus or in the food places close to work. It may take a little prep upfront, but it’s really worth it in the long run, especially now with my dairy-free dietary restrictions.

So, today I thought I’d share some healthy lunch and snack recipes that you can make ahead and carry to work/school during the week.

      I feel ya! If I manage to spread the food prep over multiple days instead of just Sunday evening, I don’t mind it so much, but ofc I’m a master procrastinator so that never happened haha

    I don’t have to pack for work or school anymore, but I love to roll up slices of green pepper in lunchmeat then dip in hummus. I keep them stored in a mason jar with a cuppow cup in the top for the hummus.

    I’m laughing at your blog name since I too am an Ex Sloth and can totally relate! I loved this post because not only are the recipes fabulous, it reminds us that healthy living is all about preparation.     Thanks for including me, lovely!! I pack my lunch and snacks every day. Right now I’m doing juice + almonds for lunch (I realized I was eating wayyyy too much during the day and I’m so busy it’s just easier to do that anyway!) but that cashew and grape chickpea salad looks so great! xoxo
