Honey Chocolate Chip Oatmeal Cookies

These decadent, soft and chewy Honey Chocolate Chip Oatmeal Cookies are also dairy and refined sugar free, thanks to Nektar Naturals Honey Crystals.
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • ¾ cup Nektar Naturals Honey Crystals**(see notes for vegan option)
  • ⅓ cup melted coconut oil (use a little more if dough seems is too dry)
  • 2 teaspoons vanilla extract
  • 1 cup rolled oats oats
  • ¾ cups whole wheat flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ - 1 cup dairy-free chocolate chips
  1. Combine ground flax and water in the bottom of a mixing bowl and set aside about 10 minutes
  2. Pre-head oven to 350F, line a baking sheet with parchment paper and set aside
  3. Beat together the flax egg, Nektar Naturals Honey Crystals, coconut oil and vanilla extract
  4. Whisk in oats, flour, baking soda and salt until well combined
  5. Fold in chocolate chips
  6. Spoon out dough onto the baking sheet and bake for 10 minutes
  7. Allow to cool on a wire rack before devouring
**Can sub honey crystals for equal part brown or coconut sugar
For thicker cookies, refrigerate balls of dough for at least 2 hours or pop in the freezer for 15 to 20 minutes before baking
