Pina Colada Parfait

This Vegan, Gluten Free Pina Colada Parfait with homemade chia seed coconut milk 'yogurt' is rich and creamy from the coconut and tangy and sweet from the pineapple. The perfect breakfast or snack on a warm spring or summer day.
  • 1 can full fat coconut milk
  • 2½ tbsp chia seeds
  • 2 tbsp liquid sweetener of choice
  • ½ - 1 cup pineapple chunks
  • ½ cup granola (I used my Coconut Almond Granola)**
  • unsweetened shredded coconut for topping
  1. Whisk together coconut milk, chia seeds and sweetener in a bowl, until none of the lumps from the coconut milk remain
  2. Cover and refrigerate overnight or for at least 3 hours until it sets
  3. Prepare granola if making your own
  4. Once the coconut milk 'yogurt' is set, layer the yogurt, pineapple and granola into a glass, starting with the yogurt.
  5. Top with more pineapple and shredded coconut and enjoy immediately or refrigerate for later
** For the paleo version, skip the granola and use a combination of shredded coconut and your favourite nuts
