Apple Surprise Pumpkin Spice Muffins

These pumpkin muffins the perfect healthy treat for fall. With less oil and refined sugars, plus an apple surprise, what's not to love?
For the muffins:
  • 1¼ cups whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp pumpkin spice
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ¼ cup coconut oil, melted
  • ½ cup applesauce
  • ½ cup maple syrup
  • 2 large eggs
For the Apple Surprise:
  • 1-2 apples, peeled, cored and cut into ½" cubes
  • 1-2 tsp pumpkin spice
  • 1 tsp coconut oil
  1. Starting with the surprise, Heat the coconut oil over medium heat. Add apples and pumpkin spice and cook until apples are soft (about 4-5 minutes). Set aside.
  2. Preheat oven to 350
  3. In a medium bowl, whisk together flour, baking soda, salt and pumpkin spice.
  4. In another bowl whisk together the pumpkin, coconut oil, applesauce, maple syrup and eggs until well blended
  5. Add the dry ingredients to the wet and mix gently until the batter is smooth
  6. Spoon a layer of the batter (a little less than ⅛ cup) into 9 cups of a greased or lined muffin tin.
  7. Spoon some of the apple surprise into each muffin cup
  8. Top each cup with remaining batter and tap the sides of the muffin tin to help it settle
  9. Bake for 25 to 30 minutes or until the muffins pass the toothpick test
  10. Allow the muffins to cool for 5 minutes then remove from the tin and place on a wire rack
  11. Store in an airtight container for up to a week
If you want your muffins a little sweeter lower the amount of applesauce and increase the maple syrup by equal amounts, but no more than ½ cup
If you don't want the surprise, you can fold the cooked apples directly into the batter at the end
