Eggplant Pizza Subs

  • One large eggplant
  • 1 tsp olive oil
  • ¾ cup pasta sauce (I used one with mushrooms)
  • 1 can whole kernel corn
  • 2 chicken breasts, cooked and shredded
  • 2 tomatoes, diced
  • 1 small onion, diced
  • 1 cup olives, diced
  • 1 cup cheese, grated (I used extra old cheddar)
  1. Preheat oven to 350
  2. Leaving the skin intact, carve out the insides and chop into small pieces
  3. In a bowl, mix the chopped eggplant and other 'toppings' with olive oil
  4. Pour pasta sauce into each eggplant half, add the filling mixture and top with cheese
  5. Bake for 30 minutes or until the chopped eggplant pieces are cooked all the way through
Try different combinations of toppings/fillings with these. *For a completely clean meal, use homemade or clean pasta sauce or substitute with salsa
