Hey Friends! How’s it goin?

Yesterday was a big day for me. I bought myself a new toy for the kitchen and made nut butter for the first time. Specifically, this Coconut Mocha Cashew Butter.

You may or may not know that Target Canada will soon be no more. After just two years, they’re closing their doors. I’m can’t call myself a die hard Target fan, but I am going to miss it. I’ve gotten some really great stuff from there in the last couple of years.

Their workout clothes are always on point and they’ve got great inexpensive handbags and shoes. And a lot of my very small makeup collection also comes from Target. But, as great as those things are, my things from Target were picked up from the homeware/kitchen section. I have so many gadgets and food props from Target and I LOVE them all.

I’ve been surviving with a mini food processor/food chopper for the last year or so and I managed to make some amazing things with it, like this sweet potato pizza crust and these black bean brownies. But, it either isn’t powerful enough to make nut butters or I’m too impatient to stand around holding down the pulse button down forever. Since the entire reason I bought it in the first place wast to make my own nut butter, I’ve been thinking of upgrading since the day after I bought it.

So, when I heard that Target’s clearance sale was starting yesterday, of course I had to go see if I could snap one up on sale. And that’s why yesterday – after only 8 hours of sleep in the last 48 hours – I dragged my butt out of bed at 8:30am, grabbed some sustenance at Starbs (aka all the coffee) and headed to Target with some friends just half an hour after they opened. #dedication

By the time we got there, the only available trollies had to be dug out from under mountains of snow, the line to pay was already 50+ people deep and some shelves were looking a little bare. But, I was able to find a large food processor that I liked – along with a couple other things for the kitchen – and was out of Target in about 90 minutes.

Of course, once I got home, I had to make some kind of nut butter. My little food chopper and I have been attempting to make this cashew butter for a while now so I was pretty excited to really test it out. It’s creamy, salty-sweet, full of delicious mocha flavour and – best of all – ready in under 20 minutes.

So, basically dessert in breakfast form. Sale or no sale, should have invested in a more powerful food processor before now because I would have saved myself hours of lost sleep this morning AND I could have been enjoying the amazingness that is this coconut mocha cashew butter for months. #priorities

This coconut mocha cashew butter is creamy, salty-sweet, full of delicious mocha flavour and - best of all - ready in under 20 minutes.

Recipe type: Breakfast
Ingredients
  • 2 cups cashews
  • ¾ cup shredded coconut
  • 2 tbsp chocolate chips
  • 1 tbsp coffee grounds
  • 1 tbsp cocoa powder
  • 1 tbsp coconut oil, melted
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ tsp vanilla extract
  • ¼ tsp coconut extract
  • 2 tbsp maple syrup
Instructions
  1. If your cashews are not pre-roasted, preheat oven to 350F and roast in an unlined baking sheet for 10 minutes
  2. Add cashews and coconut to food processor and process until a mealy consistency is reached
  3. Add coffee, cocoa powder, cinnamon and salt and process until smooth (5 - 10 mins)
  4. Add in maple syrup chocolate chips, extracts and coconut oil and process until smooth and creamy.

    Target still hasn’t made it to the UK, but at least we have food processors… So this I can do! I’ve made nut butter before, but keep meaning to make a flavoured variety – and this one is literally combining all my loves – coconut + chocolate + coffee… wow.

    Confession: I’m not actually sad to see Target go. Ours was particularly bad here in Edmonton, and going in there was kind of creepy because it was always SO quiet. I thought about hitting up the sales yesterday,y but then we got hit with a pretty nasty storm so I camped out at home instead 😉 And yes, yes, YES to food processors! My favourite kitchen gadget after my blender.

      Ours wasn’t great but they still had some hidden gems. The creepy quiet was a thing here too though, except for the Starbucks which was horrible but, weirdly, still always busy :/
      Also, I got stuck at home on Monday cuz of the crazy weather too. Didn’t mind too much cuz I got some guilt free reading in haha

    Okkkk yum. I’ve been loving cashew butter lately and this just takes it a notch up. Oh and Target sales are worth any and all lost sleep. I LOVE TARGET.

      Haha Target in CA was mostly meh and I still liked going (and spending all my $$). Can’t imagine what would happen if I let myself loose on Target over in the US!

    cashew butter is my favorite! i do have a food processor but had to replace it after i tried to make sunflower seed butter once – haven’t ever tried to make another butter since!

      Oh, I feel you. My little food processor struggled so hard with nut butters that I had to give up. This one worked like a charm though. Fingers crossed it doesn’t die on me!

    I need this in my life but I would be licking the bowl clean… and the blade and spatula and everything else. Congrats on your food processor… also for selfish reasons because I’m sure you’re gonna come up with some bomb recipes with it!!

      Girl, I feel you. Even yesterday when the store was full and I knew I only needed the food processor, I HAD to walk around the entire store. Definitely a black hole haha

    That nut butter sounds like dessert for breafast, for sure! Having a full-sized food processor is a wonderful thing. Though, I have to say I’m not a fan of Target and am happy to see them go. They didn’t do justice to the Canadian market, but more importantly, the owners are creepy politically.

    No more Target for you 🙁 that’s terrible! I’m glad you were able to take advantage of the sale, though. I’m in love with my big food processor, and I REALLY want to make this cashew butter – my only fear is I would eat the whole jar in one sitting!

    I don’t have a nut processor, but it’s definitely on my wish list. This wouldn’t work with a blender would it? It just makes it into powder?
