By now, we should all know what a huge granola fiend I am. It all started back when I was a kid and bought all the store bought granola. And now that I can make my own, I’ve been experimenting with different flavour combos that you don’t usually find in stores. So far I’ve shared my coconut almond and coconut cranberry orange granola recipes with you, but it’s been a while since the last one. So, without further ado, I present to you this Chocolate Walnut Granola.
Actually, there will be a little further ado since I shared the granola recipe over on The Fit Foodie Mama last Friday, so you’ll have to head there for the recipe. But rest assured, this chocolate walnut granola is so worth the extra ado. I mean, it’s easy to make, customizable and filled with healthy, wholesome ingredients (like chocolate). What’s not to love?
Quick aside: don’t forget that I’m still giving away a free one-day pass to canfitpro world fitness expo in Toronto on August 14-15. So if you haven’t already, you can enter the giveaway here. And, now that we’ve covered the to-die-for granola and the giveaway PSA, let’s talk about some of my recent eats since I’m linking up with Jenn and friends for WIAW today.
Breakfast: Dairy Free Maple “Buttermilk” Biscuits
These homemade “buttermilk” biscuits made a reappearance over the weekend. I’ve been craving them like mad and finally caved on Saturday morning after a night filled with dreams of rolling pins, cookie cutters and all the dough. As always, they did not disappoint.
Snack 1: Chocolate Walnut Granola
I made this granola two weekends ago and loved it so much I had to make a second batch. I’m still working through that second batch, but I foresee myself making this flavour over and over again because chocolate + granola = all my dreams come true.
Lunch: Sweet Potato Pizza Crust with Beef
Saturday seemed to be a day to revisit old recipes because I made my Sweet Potato Pizza Crust that afternoon. I did tweak the recipe a little so it was no longer gluten free, but it was still pretty damn delicious, if I do say so myself. I topped it with green and red bell peppers, pineapple chunks, ground beef and homemade pizza sauce. So good!
Dinner: Pizza and Wings
Can I be real with you for a minute? I hardly ever take pictures of my dinner because natural light works best for food photography (at least for me) so I shut down my camera when daylight starts to wane. So, once again, I’ve got no picture of Saturday’s dinner for ya, but I’m pretty sure it was more sweet potato pizza with a couple homemade wings leftover from the day before.
Snack 2: Oatmeal Chocolate Chip Cookies
I swear I baked more on Saturday than I have in the last 3 weeks combined. You’d think that after the early that hit me after dinner that night. So, I turned on the oven again and whipped up a batch of Oatmeal Chocolate Chip Cookies. I didn’t use that exact recipe, but if I’d remembered it’s existence, I would have #foodbloggerproblems. Another food blogger problem? I didn’t take pics of the cookies that night because of the whole after sunset thing. But, Sunday was #NationalIceCreamDay (hashtag required, obvi) and I had leftover cookies with my ice cream, so a picture of that will have to suffice.

I’m the same! Yogurt is just to thick maybe? Whatever the reason, it takes away from the granola experience haha
Also, YES! That’s exactly how I felt when I found out about the conference too. I’m in Waterloo, but it’s a heck of a lot easier to make it to Toronto for something like this than all the way to LA lol.
you can’t really go wrong with chocolate granola! Yum looks great

You are so right! Chocolate makes everything better π
My husband’s the granola lover in our family, though I’ll have it if there isn’t anything else to eat for breakfast :-). I’ve never made it though, so I should probably try that before I judge.

I’ll admit that I’m biased, but I love my homemade granola even more than the store bought stuff and that’s saying something since I’ve been granola obsessed for most of my life. Anyway, the point: you should def try making your own π
Drooling over here! Can you just make me a bunch of different granola and send it to NYC?! Pretty please!

I’m a huge fan of granola. Whenever I have yogurt, I try to remember to add some granola to the top of it.

I used to be the same way when I still ate dairy. In fact, most times, I only ate yogurt if granola was involved haha
Those biscuits look amazing! I’m always a sucker for a good biscuit. I mean everything here looks amazing as usual π

I’m going to make some cookies tomorrow!

Oooo I LOVE granola! Any time I’ve ever tried to make a chocolate granola it’s turned out pretty crappy, so I’m looking forward to trying out yours haha. My favourite type of granola to make is maple pumpkin. So delish!
Since I just came back from a trip to the states (wuddup BlogFest!) I have been eating a lot of….Cookie Butter!! π We don’t have TJ’s up here so I always stock up when I head south.

I’m with you on the crappy chocolate granola. It took so long to get this right! I think the trick is adding the chocolate chips at the end, so they don’t burn in the oven. Hope you enjoy it!
Also, I’ve never heard of Cookie Butter, but I’m sure I need to. Off to investigate π
Yum! Especially those chocolate oatmeal cookies. Pinning for later this weekend.
