Hey Friends! How’s it goin?

Sundays are usually cook days in the ExSloth Kitchen since that’s the only day I have for uninterrupted kitchen time. Apart from testing recipes for the blog, I use that time in the kitchen to batch cook a couple things for the week. Most weeks it’s shredded chicken breast and roasted veggies, pasta, rice or sweet potatoes or some combo of the four. As you can tell, my sides vary a little from week to week but my meat is generally the same. Sure, I sometimes mix it up with salmon here and there but that’s pretty rare.

Last month I made a concerted effort to try different meat recipes and I spent a lot of time trolling the black hole Pinterest for recipe inspiration. Since you guys liked last week’s fall breakfast roundup so much, I decided to share a some of the dinner recipes I found with you.

Note: I very rarely eat beef and pork for digestive reasons, so you won’t find any of those in this list, but there are still an insane number of dinner options here if you’re looking to spice up your meat choices.

    Chicken and Fish are the only meats I eat. This is a lovely round-up! The good thing is that my dining hall for some weridly wonderful reason makes me really great plain grilled chicken, salmon, and tilapia! I of course bring it back to my room to doctor-up, but it surprisingly is damn good quality! YAY!

    omg I love seafood! I could live on fish alone but my favorite is Chilean Sea bass – add some mango salsa to it pan seared and YUM!

    I’ve been so, so bad with prepping meat lately… mostly because working with the raw stuff totally skeeves me out. Usually I’ll just pick up a roasted chicken in the store and pick away at it throughout the week. The one thing I do wanna do, though, is buy a crockpot so that I can make shredded chicken. I hear it’s amazing!

    Garlic and margarine. The two biggest joys throughout everyday life. The two fixings I could most likely live off of for the remainder of my life. Furthermore when you consolidate these two in a magnificent shrimp skillet, indeed, itโ€™s downright flawless.
